Piri Piri Chicken Wings Recipe

Preparing the Wings

First up, let’s mix the ingredients for the rub. Mix all the ingredients in a large bowl:

  • 2 Tbsp Brown sugar
  • 1-2 Tbsp Garlic powder
  • 1 Tbsp Onion powder
  • 1 Tbsp Sea salt
  • 2 tsp Black pepper
  • 1 tsp Paprika

Next up, let’s prepare the chicken wings for smoke. Make a small incision close to the wing joint, and pull to straighten the wing. Do this with every wing, then place them into the bowl with the rub. Shake it up, until they are all coated nicely. Don’g be afraid to add a good amount if you like your wings tasty or even to pull back a bit on the rub if you’re not so sure.

Once that’s done, we can sauce these babies up.

Piri Piri Sauce Recipe

  • 1 cup olive oil
  • 1/3 cup cider vinegar (white or red)
  • 1/4 cup burbon
  • 6 fresh chili peppers (cut)
  • Juice of 1 lemon
  • 3 cloves garlic chopped
  • 1 tsp sea salt

Mix all piri piri sauce ingredients in sealable glass jar. Let sit refrigerated at least 3 days before using. For optimal results let it sit for 2 weeks before use. Grab your piri piri sauce, and add a few generous tablespoons to your bowl of wings. Shake the wings up again, until coated. Again, be as liberal or conservative as you desire on the sauce here.

Fire Up Your Pit!

You’ll need a good reliable smoker and a high quality and reliable thermometer to measure your ambient air temperature inside of you smoker. Likely won’t need a probe to measure you meat temperature because these are wings, however if you want to do it like the pros do, here’s the top quality quick read thermometer that many of them use.

Prepare your grill for indirect cooking. adding a few chips of your preferred smoke wood. If you’re not sure what types of wood go good with chicken, then maybe use some pecan or a lot of Pit Masters like to use some fruit woods like apple or cherry with their poultry cooks. Let the temperature rise to the 400ºF range, and put the wings on the indirect side. Expect the cook to take about 30-35 minutes.

About 20 minutes into the cook, hit the wings with a quick second coat of piri piri sauce. Then give them another 10-15 minutes on the grill.

When the Piri Piri chicken wings are done, pull them off the heat, and serve immediately. For an extra kick, serve alongside your favorite dipping sauce!
