Compound Butter Recipe

Making your own compound butter is a 2-minute process that will up your game significantly. These are the ingredients you are going to need:

  • Butter, 1/4 C
  • Sage, 1 tsp
  • Chives, 1 tsp
  • Parsley, 1 tsp
  • Thyme, 1 tsp
  • Minced Garlic, 1 clove
  • Sea salt & black pepper

Put all the ingredients in a large enough bowl. Make sure you let the butter sit at room temperature for a couple of minutes beforehand to soften. Mix everything well until even.

Scoop the compound butter out of the bowl, and wrap it in saran wrap. Chill in the fridge for 1-2 hours.

Grilling NY Strip Steaks

While your grill is coming up to temp, take a moment to season the NY strip steaks. Use freshly ground black pepper, and either sea or Kosher salt – larger flakes will add to the texture later on. Make sure you don’t forget to season the fat cap.

Let the steaks sit at room temperature for 10 minutes, so the meat can sweat through the rub.

Once the pit is sitting at around 225º-230ºF, place the steaks on the heat and close the lid. Cook to an internal temperature of 125ºF.

The Final Sear

Let the steaks cool down for only a few minutes. Then put them back on the pit, this time directly over your heat source. Sear each side for 45 seconds before flipping. Repeat so each side is seared twice.

Your grilled NY strip steak is ready! Serve with some compound butter, and enjoy!
