Preparing the Pork Ribs

The first thing you’ll want to do, is prepare the pork ribs. Remove the silverskin, trim if necessary, and pat dry with a paper towel.

Next up, grab your favorite BBQ rub, and apply an even layer on both sides of the rib. If you feel confident, try layering on different rubs – for example, one sweet, one spicy.

Let the ribs sit at room temperature for 10-15 minutes, allowing the meat to sweat through the rub.

Cooking Competition Ribs

Fire up your grill, and place the ribs over indirect heat, meat side up. Spread some sauce on top, and let them cook for 2.5 to 3 hours.

At this point, the ribs should have a nice color – it’s time to wrap the ribs!

Wrap tightly in aluminum foil, with brown sugar and a sauce of your choice. Place the ribs back on the grill, and cook for 2 more hours.

Finally, for 1 last hour of cooking, unwrap and glaze the ribs with your favorite BBQ sauce. Repeat the glazing every 15-20 minutes, until the ribs are done.
